Serving Idea: Slow Cooked Lamb Shoulder

Serves 4-6

Ingredients

1 jar of SOME Foods Capsicum, Olive & Chilli Sauce
125ml water
1.5-2kg lamb shoulder joint (ask your butcher to prepare it for easy serving for you)
1 bunch of flat leaf parsley
2 lemons

Method

Using an oven:

Preheat the oven to 190°C.

Place the lamb shoulder in an oven proof casserole dish that comes with a fitted lid. Pour the contents of the jar of SOME Foods  Capsicum, Olive & Chilli Sauce and the water over the lamb. Place the lid on the casserole dish, place the dish in the oven and cook for 2 hours. After 2 hours, turn the heat down to100°C and cook for a further 3-4 hours. 

Remove the casserole dish from the oven, remove the lamb from the dish and place onto a serving dish and cover with foil. Keep the juices in the casserole dish.

Prepare the low FODMAP gremolata by chopping the parsley finely and putting into a small serving bowl. Then zesting the lemons and placing the zest in the bowl with parsley, mixing the two ingredients together.

Scoop off the oil that is sitting on top of the sauce in casserole dish, then pour the remaining sauce into a serving jug.

Serve the lamb, sauce and low FODMAP gremolata with roast potatoes, and steamed squash and carrot.

Using a slow cooker:

Place the lamb shoulder in the cooking dish of the slow cooker. Pour the contents of the jar of SOME Foods  Capsicum, Olive & Chilli Sauce and the water over the lamb. Put the lid on the and turn the slow cooker to Auto and cook for about 6 hours.

Turn off the slow cooker, remove the lamb from the dish and place onto a serving dish and cover with foil. Keep the juices in the cooking dish.
