Serving Idea: Vegetable Curry

Serves 4

Ingredients

1 jar of SOME Foods Thai Massaman Curry
200g potato, peeled and cut into 2.5 cm cubes
100g carrot,peeled and cut into 2.5 cm cubes
100g Jap pumpkin, peeled and cut into 2.5 cm cubes 
100g green beans, cut into 2.5cm lengths
100g zucchini* , cut into into 2.5cm lengths
Optional extras
2 tablespoons lime juice
2 fresh long green chillies, finely sliced

* This serving size is low in FODMAPs. Avoid large servings (>100g per person) which contains high amounts of Oligos-fructans.

Method

Tip the contents of a jar of SOME Foods Thai Massaman Curry into a large pan and bring to the simmer. Add the potato, carrot and pumpkin, then cover the pan and cook for 7 minutes. Add the beans and zucchini and cook for a further 5 minutes. 

If using, stir in the lime juice and chilli.

Serve as it is or over cooked rice.
